Envisioning a place of my own, I created the business plan as an MBA student at the University of St. Thomas. With Sapor, I wanted to explore the world of flavor. I also wanted to create a neighborhood place - never dreaming of a Twins Stadium right out our front door or the Guthrie Theater mere blocks away. A place that was as easy to drop in for drinks as it was to enjoy a great meal.
The years have sped by and, in that time, my notions of flavor have shifted from just the food and libations and back to the core of what I enjoy about this business - the connections made everyday among family and friends at our tables!
My experience comes from over twenty-five years of cooking with people from all over the world - France, Pakistan, Tunisia, Mexico, Ecuador - I have cooked side-by-side developing an appreciation for each of their unique cooking styles, cultures and traditions. I have infused those food techniques with those that I enjoy in our country and created seasonal dishes to enjoy here.
Every dish has a story. It comes from somewhere. Whether the ingredients are indigenous to South America or Asia or the United States, a cook in a small kitchen in a neighborhood just like ours created it. And they inspire me.
That’s what I love about food. The ingredients of a meal are just the beginning. Food is about people— where they live and how their culture influences what they create.
